MDC prepare dehydrated liver every few months. Finding raw beef liver in Melbourne can actually be quite difficult. I’ve found a butcher in the Queen Victoria Market is my closest supplier. It’s super cheap, I usually buy two livers for a bargain price of $4.
I use a Fowlers Vacola dehydrator. It’s powerful and will dehydrate overnight. If buying new, a Fowlers dehydrator can be pricey so I suggest looking around on eBay or Gumtree for a second hand unit. They are known to be a good quality, long lasting product, so purchasing a used dehydrator is likely to be just as good as a new one. I also have removable non-stick mats that are amazing! Makes the cleaning process much easier.
Slice the raw beef liver into thin strips and arrange on dehydrator in a single layer. Ensure the dehydrator is on meat setting (usually the hottest option). Leave over night or for approximately 12-15 hours.
I store the dehydrated liver in the freezer until I’m ready to use it. For day-to-day use, I keep the liver in a zip lock bag. When I’m finished walking for the day, I store leftovers in the fridge.
